If there is one thing we love around Valentines Day, its dessert that’s cute, festive, and super simple. These Heart shaped brownie batter truffles check every one of those boxes! Made with rich, edible brownie batter (no baking required!) and coated in a vibrant pink, white chocolate. They are as fun to make as they are to eat! The heart shaped molds give them that extra wow factor, making them perfect for Valentines Day, Galantines Day, or anytime you want to spread the love! Sweet, simple, and ready in no time!

For the Love of Brownie Batter

A little secret behind these brownie batter truffles is that they were inspired by our long-standing love for brownie stuffed cookies, and honestly, brownies in all forms. We’ve always believed that anything with a rich, fudgy center is automatically a good idea, so turning that delicious brownie batter into a bite sized, no bake treat felt like the next natural step. Coated in pink chocolate and shaped into hearts, these truffles are proof that our brownie obsession knows no bounds, and we wouldn’t have it any other way!

Brownies, specifically classic extra fudge ones, have always been our favorites, so the brownie center in these was a must. It had to be rich, chocolatey, and melt-in-your-mouth fudgy, just like the brownies we love. That brownie core combined with a thin crunch of white chocolate is the perfect fudgy brownie vibe we were going for and knew we would keep coming back to!

Why I Measure in Grams (and You Might Want To, Too)

If youโ€™ve ever made the same recipe twice and gotten two totally different results, the measuring method is often the reason.

Professional bakeries almost always measure by weight, not volume. Measuring cups leave room for inconsistencyโ€”especially with ingredients that pack differently depending on how you scoop or pour them. A scale removes all of that guesswork.

One of the biggest offenders is sugar. Different sugars (and even the same sugar measured by different people) can vary wildly in volume, but 100 grams is always 100 grams. Measuring by weight gives you repeatable, bakery-consistent results and cuts down on extra dishes at the same time.

A food scale is one of the best (and most affordable) investments you can make for your kitchen if you love baking and want your recipes to turn out exactly the same every time.

Ingredients To Prepare

Before baking, take a few minutes to gather the ingredients below and to ensure that they are rich, fudgy, and perfect for Valentines!

  • Butter (salted or unsalted)
  • Granulated Sugar
  • All-Purpose Flour
  • Cocoa Powder
  • Vanilla Extract
  • Milk
  • White Chocolate
  • Pink Food Coloring

Once you have all of the ingredients ready to go, you’re officially set up for brownie batter truffle success. I always recommend measuring everything out ahead of time!

Brownie Batter Truffles

Ingredients

Coating
  • 1 1/2 white chocolate chips/bark
  • pink food coloring
Brownie Batter Filling
  • 1/4 cup butter
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 1/3 cup cocoa powder
  • 1/2 cup All-Purpose flour

Method

Step 1: Make the Brownie Batter Filling
  1. In a medium bowl, beat the butter and granulated sugar until smooth and creamy. Mix in the vanilla extract and milk until combined.
  2. Add the flour and cocoa powder, folding until a thick, edible brownie batter forms. Set aside.
Step 2: Melt & Color the Chocolate
  1. Add the semi-sweet chocolate chips to a microwave-safe bowl. Melt in 30-second intervals, stirring between each, until fully smooth. Mix in pink food coloring until your desired shade is reached.
Step 3: Coat the Heart Molds
  1. Spoon 1โ€“2 tablespoons of melted chocolate into each heart mold. Use the back of a spoon to spread the chocolate evenly along the bottom and sides.
  2. Place the molds in the refrigerator to chill for 15โ€“30 minutes, or until the chocolate is fully set. Reserve the remaining melted chocolate for later.
Step 4: Fill the Truffles
  1. Once the chocolate shells are firm, add about 2 tablespoons of brownie batter filling to each mold, gently pressing it in.
Step 5: Seal & Chill
  1. Reheat the reserved chocolate until smooth. Spoon about 1 tablespoon of chocolate over each truffle to fully seal the filling.
  2. Return the molds to the refrigerator and chill for 30 minutes, or until completely set.
Step 6: Finish & Store
  1. Carefully remove the truffles from the molds and decorate with your favorite toppings if desired. Enjoy immediately, or store in an airtight container in the refrigerator for up to 8 days.
