S’more Rolls

One of the most nostalgic flavors for me has always been s’mores. No matter how old I get, that combination of toasted marshmallow, melted chocolate, and graham crackers instantly takes me back to some of my favorite memories. Sitting around the fire pit in our backyard with my family, roasting marshmallows outside a mountain cabin after a long day of hiking, or gathered around a campfire on a backpacking trip with my friends while one of them played guitar and the rest of us sang along, somehow s’mores always seemed to be part of those moments. These rolls bring all of that nostalgia into one soft, fluffy bite. They’re rich, gooey, and packed with classic s’mores flavor, making them just as perfect for a summer gathering as they are for a cozy fall or winter morning. Bake Now or Bake Later

If you want to bake these s’more latte rolls right away, follow the instructions and let them rise till fluffy, then bake as directed for soft, fluffy rolls. If you’d rather prep ahead, you can assemble the rolls, cover them tightly, and refrigerate overnight. In the morning, let them sit at room temperature until slightly fluffy, then bake fresh. Both methods work beautifully, so you can choose what fits your schedule best!

Why I Measure in Grams (and You Might Want To, Too)

Ingredients

Dough
  • 5 cups flour
  • ยฝ cup crushed graham crackers
  • 1 tbsp instant yeast
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 egg
  • ยฝ cup granulated sugar
  • 1 ยฝ cups milk
  • 5 tbsp butter
Filling
  • ยฝ cup butter
  • 1 cup granulated sugar
  • 1 tbsp heavy cream
  • 1 tsp vanilla extract
  • 2 crushed graham crackers
  • Chocolate chips sprinkled on
Icing
  • Marshmallow fluff toasted

Method

Step 1: Warm the milk and butter
  1. In a microwave-safe bowl or small saucepan, gently warm the milk and butter together until just lukewarm, about 60โ€“90 seconds. Stir until the butter is completely melted. The mixture should feel warm but not hot.
Step 2: Make the dough
  1. In the bowl of a stand mixer fitted with a dough hook, combine the flour, crushed graham crackers, instant yeast, salt, and granulated sugar. Add the vanilla extract, egg, and warm milk mixture. Mix on lowโ€“medium speed for 2โ€“3 minutes until a soft dough forms.
Step 3: Knead and rise
  1. Transfer the dough to a lightly floured surface and knead for 10โ€“15 minutes, or continue kneading with the dough hook until smooth and elastic. Place the dough into a lightly greased bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.
Step 4: Prepare the filling
  1. While the dough rises, mix together the softened butter, granulated sugar, heavy cream, vanilla extract, and crushed graham crackers until smooth and spreadable.
Step 5: Roll and fill
  1. Once the dough has doubled in size, turn it out onto a lightly floured surface and roll it into a large rectangle of even thickness. Spread the filling evenly over the dough, leaving a small border around the edges. Sprinkle the chocolate chips evenly across the surface.
Step 6: Roll and cut
  1. Starting from the long side, tightly roll the dough into a log. Using dental floss or a sharp knife, cut the log into evenly sized rolls.
Step 7: Second rise
  1. Place the rolls into a buttered baking dish, leaving a little room between each one. Cover and let rise for another 45โ€“60 minutes, until noticeably puffy.
Step 8: Bake
  1. Preheat the oven to 350ยฐF (175ยฐC). Bake the rolls for 28โ€“32 minutes, or until lightly golden brown and baked through. Remove from the oven and allow them to cool slightly.
Step 9: Add the marshmallow topping
  1. Spread marshmallow fluff generously over the warm rolls. Using a kitchen torch, carefully toast the marshmallow fluff until golden brown and lightly charred, just like a classic campfire marshmallow.
Step 10: Serve & enjoy
  1. Serve warm while the chocolate is still melty and the marshmallow topping is soft and gooey. These rolls have all the flavors of a classic s’more wrapped up in one fluffy cinnamon-roll-style treat.
