Pumpkin Bread Overnight Oats

These pumpkin bread overnight oats are inspired by the MUSH pumpkin overnight oats I eat almost daily at school with my dining dollars, but consider this the upgraded, homemade version. Same cozy pumpkin vibe, but ours are way more spiced, more flavorful, and honestly just better. And if you’re not paying with dining dollars, this is way better bang for your buck: one batch makes a whole lot more for about the same price. Cozy, filling, healthy, and delicious, basically everything you want in a fall breakfast (or anytime of the year for me!).
The Secret Ingredient
The secret ingredient that really makes this next level is one you probably wouldn’t expect, dates. They blend right into the oats, adding natural sweetness and a rich, almost caramel like flavor that makes everything taste more like pumpkin bread and less like plain oatmeal. You don’t really notice them on their own, just how naturally sweet they oats are, with that perfect, just right level of sweetness!

These are also perfect for meal prep. Make a batch once and you’ve got an easy, grab and go breakfast ready for days! Just store it in the fridge and you’re set for up to 10 days! It’s one of those recipes that makes busy mornings so much easier while still feeling cozy and homemade!

Why I Measure in Grams (and You Might Want To, Too)

Pumpkin Bread Overnight Oats
Ingredients
- 1 1/2 cups almond milk
- 1/2 cup canned pumpkin
- pinch of salt
- 6 pitted dates
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 cup protein powder (weight may change depending on brand!)
- 1 1/2 cups old-fashioned oats
Method
- In a food processor or blender, combine milk, canned pumpkin, pitted dates, a pinch of salt, vanilla extract, pumpkin pie spice, cinnamon, and protein powder until there are no date chunks.
- Blend until smooth and no date chunks remain.
- Divide old-fashioned oats in individual jars/containers for meal prep (3-4 servings) or place all oats into one large container.
- Pour the blended pumpkin mixture evenly over the oats.
- Stir the oats and pumpkin mixture together until fully combined. Cover and refrigerate for at least 2 hours (preferably overnight!).
- Enjoy straight from the fridge, or top with cinnamon, nuts, or pumpkin seeds! Keep refrigerated and eat within 10 days!
