Pumpkin Bread Overnight Oats

Ingredients
 
 

  • 1 1/2 cups almond milk
  • 1/2 cup canned pumpkin
  • pinch of salt
  • 6 pitted dates
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 cup protein powder (weight may change depending on brand!)
  • 1 1/2 cups old-fashioned oats

Method
 

Step 1
  1. In a food processor or blender, combine milk, canned pumpkin, pitted dates, a pinch of salt, vanilla extract, pumpkin pie spice, cinnamon, and protein powder until there are no date chunks.
  2. Blend until smooth and no date chunks remain.
Step 2
  1. Divide old-fashioned oats in individual jars/containers for meal prep (3-4 servings) or place all oats into one large container.
Step 3
  1. Pour the blended pumpkin mixture evenly over the oats.
  2. Stir the oats and pumpkin mixture together until fully combined. Cover and refrigerate for at least 2 hours (preferably overnight!).
Step 4
  1. Enjoy straight from the fridge, or top with cinnamon, nuts, or pumpkin seeds! Keep refrigerated and eat within 10 days!
