Ingredients

Cookie Dough
  • 1 cup butter
  • 1/2 cup granulated sugar
  • 2/3 cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 tbsp molasses optional
  • 2 cups All-Purpose Flour
  • 3/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tbsp espresso powder optional
Cream Cheese Filling
  • 1 block cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 3 tbsp cocoa powder
Coating
  • 1/2 cup granulated sugar
  • 1/4 cup color coated chocolate chips

Method

Step 1 โ€” Prepare the Chocolate Cream Cheese Filling
  1. Preheat the oven to 350ยฐF (convection). Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, mix together the room-temperature cream cheese, powdered sugar, cocoa powder, and vanilla until smooth. Scoop 1-tablespoon portions onto a parchment-lined plate or tray and freeze until firm.
Step 2 โ€” Make the Cookie Dough
  1. In a large bowl or stand mixer fitted with the whisk or paddle attachment, beat the room-temperature butter, granulated sugar, and brown sugar until light and off-white in color, about 1โ€“2 minutes.
  2. Add the egg, molasses, and vanilla extract, mixing until fully combined.
Step 3 โ€” Add Dry Ingredients
  1. Add the all-purpose flour, cocoa powder, espresso powder, baking powder, and baking soda. Gently fold the dry ingredients into the dough until no dry spots remain.
Step 4 โ€” Test & Fill the Cookies
  1. Bake one test cookie to check spread and ensure no ingredients were missed.
  2. Scoop โ…“ cup of cookie dough and flatten it in your palm. Place a chilled cream cheese ball in the center, then fold the dough around the filling to seal completely. Roll each cookie dough ball in a mixture of granulated sugar and color-coated chocolate chips.
Step 5 โ€” Bake
  1. Place the filled cookie dough balls onto the prepared baking sheet, spacing evenly apart.
  2. Bake for 12โ€“13 minutes, until the edges are set and the centers look slightly underbaked.
Step 6 โ€” Shape & Cool
  1. For perfectly round cookies, use a round bowl, cup, or cookie cutter to gently swirl around the cookies immediately after removing them from the oven.
  2. Let the cookies rest on the baking sheet for about 10 minutes before transferring.
