Pumpkin Bread Batter
1 can pumpkin
1 cup brown sugar
1/4 cup granulated sugar
2 eggs
3/4 cups vegetable oil
2 tsp vanilla extract
2 & 1/2 cups All Purpose Flour
2 tsp cinnamon
1/2 tsp ginger
1 tbsp pumpkin pie spice
1 tsp baking soda
1/4 cup granulated sugar (for topping)
Why measure in grams?
If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.
A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.

Pumpkin Bread Batter
300 grams pumpkin
200 grams brown sugar
50 grams granulated sugar
2 eggs
170 grams vegetable oil
6 grams vanilla extract
310 grams All Purpose Flour
4 grams cinnamon
1 gram ginger
6 grams pumpkin pie spice
2 grams baking soda
50 grams granulated sugar (for topping)

Stand mixer with paddle attachment OR medium sized bowl with whisk and rubber spatula

Instructions:
Step 1
Preheat oven to convection 350 degrees Fahrenheit.
Mix pumpkin puree, vegetable oil, granulated sugar, and brown sugar in a bowl until combined.
Step 2
Stir in eggs and vanilla extract.
Step 3
Add dry ingredients (All-Purpose Flour, cinnamon, ginger, pumpkin spice, and baking soda) and fold in batter.
Step 4
Grease a bread pan and add a single piece of parchment paper over the long sides.
Step 5
Add pumpkin bread batter into pan and smooth out.
Sprinkle granulated sugar on top and bake at 350 degrees for 65-70 minutes.
Step 6
Let baked bread sit for 20-30 minutes before removing from pan.
Make sure it is mostly cool before cutting (or else it may fall apart when cutting).
Step 7
Eat fresh or store in an airtight container for up to 8 days!
