Chocolate Chip Granola Bars
Measurements:

1/3 cup honey
2 cups rice crispy cereal
2 cups instant/quick oats
3/4 cup chocolate chips (semi-sweet)
Why measure in grams?
If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.
A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.

Honey alternative?
This recipe is very strong in honey, but not everyone is a fan of its flavor. A very easy alternative for honey is marshmallows. Marshmallows melted with butter (or just melted by itself) allows all the ingredients to stick together easily, maybe even easier than the honey. Personally, the honey is more refreshing, but if you are looking for a sweeter and lighter granola bar, marshmallow can be the way to go!
Measurements In Grams:
113 grams honey
55 grams rice crispy cereal
300 grams instant/quick oats
120 grams chocolate chips (semi-sweet)
Kitchen Equipment
Stand mixer with paddle attachment OR medium sized bowl with rubber spatula
parchment paper
paper clips/binder clips (optional)
measuring cups or kitchen scale
square baking pan
Instructions:
Step 1
Add oats, rice crispy cereal, and chocolate chips into a medium sized bowl. Mix until ingredients are evenly incorporated.
Step 2
Add honey into bowl and mix thoroughly. You should not have any honey chunks and mixture should be thick, but still crumbly.
Step 3
Line a square baking pan with two rectangular pieces of parchment paper and clamp down the parchment paper on the sides of the pan using clips (I used black binder clips).
Step 4
Add your granola bar mixture into pan and flatten out with spatula and/or an uneven spatula. Make sure to pack your granola down well so it doesn’t fall apart.
Step 5
Place tray in the refrigerator for 1-2 hours or in freezer for 30 minutes.
Step 6
Cut bars 4x2 for eight individual bars or 4x4 for sixteen smaller bars. (You can also drizzle extra chocolate on top or dip the bottoms in chocolate!)
Step 7
Once done, you can store these in the fridge or freezer for 2-3 weeks (they will stay together better if you keep them chilled!).
