Pumpkin Spice Cake
Measurements:

Cake
375g all-purpose flour
600g brown sugar
2 1/2 tsp baking powder
1 tbsp ground cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/4 tsp ground cloves
2 tsp pumpkin spice
1 stick salted butter
4 eggs
250g buttermilk
150g pumpkin purée
100g vegetable oil
2 tsp vanilla extract
Cinnamon Glaze
approx. 250g powdered sugar
15g milk
1 tsp vanilla extract
Why measure in grams?
If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.
A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.

Kitchen Equipment
Stand mixer or large bowl.
Measuring cups/kitchen scale
Instructions:
Step 1
In a large bowl, add all your dry ingredients (all-purpose flour, brown sugar, baking powder, cinnamon, ginger, nutmeg, cloves, and pumpkin spice)
Step 2
Lightly mix until combined.
Step 3
Add your softened butter and mix until combined.
Step 4
Add eggs and lightly mix until combined.
Step 5
In a separate bowl, add your buttermilk, pumpkin purée, vegetable oil, and vanilla extract.
Step 6
Add wet ingreidets into mixture and mix until combined.
Step 7
Butter your bundt cake pan or pan of choice and bake on 350 degrees Farenheight until a toothpick comes out clean!
Step 8
While cake is baking, add your cinnamon, powdered sugar, and milk into a bowl and mix until combined. Add more milk or powdered sugar until desired texture.
Tip: For a thicker glaze add more powdered sugar and for a thinner glaze add more milk!
Step 9
Let cake cool completely, then add your glaze!
