Brownie

  • 2 tbsp butter

  • 1 tbsp chocolate chips

  • 2 tbsp granulated sugar

  • 1 egg yolk

  • 1/4 tsp vanilla extract

  • 1 tbsp All-Purpose Flour

  • 2 tbsp cocoa powder

Glaze

  • 1 tbsp heavy cream

  • 2 tbsp chocolate chips


Why measure in grams?

If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.

A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.

Measurements In Grams:

Brownie

  • 30 grams butter

  • 10 grams chocolate chips

  • 25 grams granulated sugar

  • 10 grams egg yolk

  • 2 grams vanilla extract

  • 8 grams All-Purpose Flour

  • 14 grams cocoa powder

Glaze

  • 15 grams heavy cream

  • 20 grams chocolate chips

 

Kitchen Equipment

  • Stand mixer with paddle attachment OR medium sized bowl with whisk and rubber spatula

  • small heat-safe bowl


 

Instructions:

  • Step 1

  • Preheat oven to convection 350 degrees Fahrenheit.

  • Melt butter and stir in chocolate chips until fully combined.

  • Step 2

  • Add in granulated sugar and mix for 1-2 minutes.

  • Mix in vanilla extract and egg yolk until just combined.

  • Add flour and cocoa powder. Fold dry ingredients into your dough until it is fully incorporated.

  • Step 3

  • Add brownie batter to a small circular cup/bowl and bake at 350 for 12 minutes.

  • Step 4

  • For chocolate glaze, heat up heavy cream for 30 seconds and stir in chocolate chips until mixture is smooth.

  • Step 5

  • Add glaze on top of brownie and chill for 10-20 minutes.

  • Eat fresh!
