Vanilla Strawberry Cake
Vanilla Cake & Strawberry Buttercream

Will make about 3-4 6’’ cakes or 2 8’’ cakes.
Measurements:
Vanilla Cake:
228g buttermilk
2 eggs
90g egg whites
8g vanilla extract
18g vegetable oil
300g sugar
252g cake flour
10g baking powder
224g salted butter
Strawberry Buttercream:
1470g powdered sugar
6 sticks salted butter (softened)
a couple spoon fulls of Crisco shortening (about 1/2 cup) (optional)
2 tsp vanilla extract
1 lb. grounded strawberries (seeds completely sifted out, should end up at about 3/4 cup strawberry juice/sauce)
half n half/ heavy cream/ almond milk (or any other milk or milk replacement) until buttercream is at soft peak or desired consistency
How to make the Grounded Strawberry Mixture:
Wash 1 lb. of strawberries and cut off stems.
Add strawberries into food processor until completely grounded up.
Using a sifter, sift out all of the strawberry seeds from the mixture until you have a smooth semi thick strawberry sauce/juice. (this process may take a while depending on how small/big your sifter is)

Preheat oven to 350°F.

Add your buttermilk, eggs, egg whites, vanilla, and vegetable oil into a bowl and mix.

In a separate bowl or stand mixer, add your sugar, cake flour, and baking powder and mix.

Once your dry ingredients are combined, add your salted butter (softened) and either mix in stand mixer until combined, or use your hands to combine butter into dry ingredients.

Once butter is combined, add half of the liquid mixture and mix until it become light and fluffy, then add remining mixture and mix till combined.

Butter your 3-4 6’’ pans or 2 8’’ pans. Then evenly distribute your batter between the pans.

Put your pans into the oven and cook at 350 until toothpick comes out clean, about 20-45 min depending on oven and pans.

While cake is cooking, add your salted butter and Crisco shortening to stand mixer and mix on medium high till mixture is light, fluffy, and almost or completely white.

Once mixture is white, turn mixer to lowest setting and slowly add your powdered sugar.

After all powdered sugar is added, add your vanilla and strawberry juice/sauce (instructions on how to make this are up above).

After you have added your strawberry sauce/juice, if your mixture is still not at a soft peak, add any form of milk that you have to get a soft peak.

Once cakes are cooled completely, take them out of the pan, and you may begin to stack and decorate!
