One little trick we always use when making our cheesecake stuffed cookies is chilling the cheesecake filling before baking. At first, we skipped it and ended up with cheesecake filling oozing everywhere, not that it wasn’t tasty, but it definitely wasn’t the neat, picture-perfect cookies we were aiming for. Letting the filling chill keeps it stable and makes it so much easier to work with, giving each cookie that perfect creamy center without the mess.

Halloween has always been my favorite holiday; there’s just something about the energy of this time of year that’s so fun and exciting! I love dressing up, decorating the house with pumpkins, cobwebs, and fall vibes, and watching festive movies that are more magical than scary, Hocus Pocus is basically a must every year. I’m not a huge fan of horror, but somehow every year I still get sucked into watching those classic Halloween and Scream movies. These Halloween cheesecake cookie bars? They’re basically Hocus Pocus in cookie form, magical, colorful, and right on theme!

Why I Measure in Grams (and You Might Want To, Too)

If youโ€™ve ever made the same recipe twice and gotten two totally different results, the measuring method is often the reason.

Professional bakeries almost always measure by weight, not volume. Measuring cups leave room for inconsistencyโ€”especially with ingredients that pack differently depending on how you scoop or pour them. A scale removes all of that guesswork.

One of the biggest offenders is sugar. Different sugars (and even the same sugar measured by different people) can vary wildly in volume, but 100 grams is always 100 grams. Measuring by weight gives you repeatable, bakery-consistent results and cuts down on extra dishes at the same time.

A food scale is one of the best (and most affordable) investments you can make for your kitchen if you love baking and want your recipes to turn out exactly the same every time.

Ingredients To Prepare

  • Butter (salted or unsalted)
  • Granulated Sugar
  • Brown Sugar
  • Egg
  • Vanilla Extract
  • All-Purpose Flour
  • Black Cocoa Powder
  • Corn Syrup
  • Baking Soda
  • Baking Powder
  • Cream Cheese
  • Powdered Sugar
  • Food Coloring

Once you have all of the ingredients ready to go, you’re officially set up for Halloween cheesecake cookie bar success. I always recommend measuring everything out ahead of time so the process is smoother, and you can focus on making the best bars possible!

Halloween Oreo Cheesecake Cookie Bars

Ingredients

Cookie Dough
  • 1 cup butter
  • 1/3 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp corn syrup optional
  • 2 1/4 cups All-Purpose Flour
  • 3/4 cup black cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
Cream Cheese Filling
  • 1 block cream cheese
  • 2/3 cup powdered sugar
  • 1/2 tsp vanilla extract
  • purple green, and orange food coloring
Topping
  • 1/4 cup granulated sugar

Method

Step 1: Prep filling
  1. Preheat your oven to 350ยฐF (convection). In a bowl, mix room-temperature cream cheese with powdered sugar and vanilla extract until smooth. Split the mixture into three smaller bowls and tint each one with food coloring to make purple, green, and orange fillings.
Step 2: Cream butter & sugar
  1. In a stand mixer fitted with a whisk or paddle attachment, beat room-temperature butter with granulated sugar and brown sugar for 1โ€“2 minutes, until pale and off-white. Mix in the egg, vanilla extract, and corn syrup until fully combined.
Step 3: Add dry ingredients
  1. Add all-purpose flour, black cocoa powder, baking powder, and baking soda to the bowl. Fold or mix on low speed just until the dough comes together.
Step 4: Assemble bars
  1. Place about two-thirds of the cookie dough into a parchment-lined 8×8-inch pan and spread evenly. Spread the colored cream cheese fillings over the dough, then top with the remaining cookie dough in chunks. Sprinkle extra granulated sugar on top if desired.
Step 5: Bake
  1. Bake the bars for 30โ€“32 minutes, until set and lightly firm on top.
Step 6: Cool & cut
  1. Let the cookie bars chill for 45โ€“60 minutes before cutting into 4×4 squares.
Step 7: Serve & store
  1. Enjoy fresh, or store in a chilled environment for up to 8 days.
