Secret Tip for Easy Swaps and Flavor Twists

Here’s a secret tip for making these cookie dough balls even more versatile. This recipe uses dates for a naturally sweet, chewy texture, but if the dates feel a little too tricky to prep or you’re short on time, you can easily swap them for any nut or seed butter, or even applesauce like we do in our Apple Cinnamon Balls. Dipping cookie dough balls can feel a little tricky, but here’s a secret for the perfect results. Freeze the vanilla balls completely before dipping and the chocolate sets quickly with no melty disasters (we’ve all been there). Not in the mood to coat the whole thing? Just dip the bottoms and let them chill on parchment paper. Once the chocolate is fully set, it should peel right off the paper, leaving you with perfect, chewy little vanilla cookie dough bites that are as fun to eat as they are to make. Vanilla Cookie Dough Balls

Ingredients

Dough
  • 5 medjool dates pitted
  • 1/4 cup water warm
  • 1/2 cup protein powder
  • 1 1/2 cup old-fashioned oats
  • 2 tbsp honey
  • 2 tsp vanilla bean paste
  • 5 tbsp milk
Coating
  • 1 cup white chocolate
  • 1 tsp vanilla bean paste

Method

Step 1: Make the date caramel
  1. Add the pitted dates, honey, and warm water to a blender. Let the dates soak for about 5 minutes to soften, then blend until completely smooth and caramel-like.
Step 2: Build the dough
  1. Transfer the date caramel to a medium bowl and mix in the vanilla bean paste.
  2. Blend the old-fashioned oats in a blender or food processor until they form a fine oat flour. Add the blended oats and protein powder to the bowl and mix until a thick, dry dough forms.
Step 3: Adjust texture
  1. Slowly mix in the milk, a little at a time, until the dough becomes soft and pliable.
Step 4: Scoop
  1. Using a 2-tablespoon cookie scoop, portion the dough and roll into smooth balls.
Step 5: Freeze
  1. Place the vanilla dough balls on a tray and freeze for 30โ€“45 minutes, until firm.
Step 6: Coat in white chocolate
  1. Melt the white chocolate in 30-second intervals, stirring between each, until fully smooth. Stir in the vanilla bean paste.
  2. Dip each frozen vanilla ball into the melted chocolate, allowing excess to drip off, then place back in the fridge to set for about 15 minutes.
Step 7: Serve & store
  1. Enjoy fresh, or store in a chilled environment for up to 14 days.
