Best Fudgy Buckeye Brownies

Ingredients
 
 

Brownie
  • 1/4 cup butter
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 2 egg yolks
  • 2 tsp vanilla extract
  • 1/3 cup vegetable oil
  • 2/3 cup cocoa powder
  • 1/2 cup All-Purpose Flour
  • 1 tbsp corn starch
  • 1/4 tsp baking soda
Peanut Butter Layer
  • 1 1/2 cups powdered sugar
  • 1 cup peanut butter
  • 1/3 cup melted butter
  • 1 tsp vanilla extract
Chocolate Ganache Topping
  • 1 cup chocolate chips
  • 1/4 cup heavy cream

Method
 

Step 1 — Mix Butter & Sugars
  1. In a large bowl, mix together the melted butter, granulated sugar, and brown sugar until fully combined.
Step 2 — Whip Eggs for Crackly Top
  1. Add the eggs and vanilla extract. Whip until the mixture turns from yellow to light and off-white.
  2. (This step is key for achieving that classic crackly brownie top!)
Step 3 — Add Oil
  1. Mix in the vegetable oil until fully incorporated.
Step 4 — Add Dry Ingredients
  1. Add the cocoa powder, all-purpose flour, cornstarch, and baking soda. Mix until just combined and mostly smooth, being careful not to overmix.
Step 5 — Bake the Brownies
  1. Pour the brownie batter into a greased and parchment-lined square pan, spreading evenly.
  2. Bake at 350°F for 21–23 minutes, until the edges are set and the center is just slightly soft.
Step 6 — Cool
  1. Let the brownies cool while you prepare the peanut butter and chocolate layers.
Step 7 — Add Peanut Butter & Chocolate Layers
    Peanut Butter Layer:
    1. Mix together the powdered sugar, peanut butter, melted butter, and vanilla extract until mostly smooth and dough-like. Spread evenly over the cooled brownies.
    Chocolate Ganache Topping:
    1. Heat the chocolate chips and heavy cream for about 45 seconds, or until melted. Stir until smooth, then pour and spread over the peanut butter layer.
    Step 8 — Slice & Store
    1. Allow the brownies to set for 20–30 minutes, then slice with a sharp knife.
    2. Enjoy fresh, or store in an airtight container in the refrigerator for up to 10 days.
