Step 1 — Mix Butter & Sugars
- In a large bowl, mix together the melted butter, granulated sugar, and brown sugar until fully combined.
Step 2 — Whip Eggs for Crackly Top
- Add the eggs and vanilla extract. Whip until the mixture turns from yellow to light and off-white.

Step 3 — Add Oil
- Mix in the vegetable oil until fully incorporated.
Step 4 — Add Dry Ingredients
- Add the cocoa powder, all-purpose flour, cornstarch, and baking soda. Mix until just combined and mostly smooth, being careful not to overmix.
Step 5 — Bake the Brownies
- Pour the brownie batter into a greased and parchment-lined square pan, spreading evenly.
- Bake at 350°F for 21–23 minutes, until the edges are set and the center is just slightly soft.
Step 6 — Cool
- Let the brownies cool while you prepare the peanut butter and chocolate layers.
Step 7 — Add Peanut Butter & Chocolate Layers
Peanut Butter Layer:
- Mix together the powdered sugar, peanut butter, melted butter, and vanilla extract until mostly smooth and dough-like. Spread evenly over the cooled brownies.
Chocolate Ganache Topping:
- Heat the chocolate chips and heavy cream for about 45 seconds, or until melted. Stir until smooth, then pour and spread over the peanut butter layer.
Step 8 — Slice & Store
- Allow the brownies to set for 20–30 minutes, then slice with a sharp knife.
- Enjoy fresh, or store in an airtight container in the refrigerator for up to 10 days.
