Ingredients
 
 

Cookie Dough
  • 1 cup butter
  • 1 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp cake batter extract
  • 2 3/4 cups All-Purpose Flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 cup confetti sprinkles
Cream Cheese Filling
  • 1 block cream cheese
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp cake batter extract
Coating
  • 1/2 cup granulated sugar

Method
 

Step 1 — Prepare the Cake Batter Cream Cheese Filling
  1. Preheat the oven to 350°F (convection). Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, mix together the room-temperature cream cheese, powdered sugar, cake batter extract, and vanilla extract until smooth. Scoop 1-tablespoon portions onto a parchment-lined plate or tray and freeze until firm.
Step 2 — Make the Cookie Dough
  1. In a large bowl or stand mixer fitted with the whisk or paddle attachment, beat the room-temperature butter and granulated sugar until light and off-white in color, about 1–2 minutes.
  2. Add the egg, cake batter extract, and vanilla extract, mixing until fully combined.
Step 3 — Add Dry Ingredients
  1. Add the all-purpose flour, baking powder, and baking soda. Gently fold the dry ingredients into the dough until no dry spots remain.
Step 4 — Test & Fill the Cookies
  1. Bake one test cookie to check how much the dough spreads and to ensure no ingredients were missed.
  2. Scoop ⅓ cup of cookie dough and flatten it in your palm. Place a chilled cream cheese ball in the center, then fold the dough around the filling to seal completely. Roll each cookie dough ball in granulated sugar.
Step 5 — Bake
  1. Place the filled cookie dough balls onto the prepared baking sheet, spacing evenly apart.
  2. Bake for 12–13 minutes, until the edges are set and the centers look slightly underbaked.
Step 6 — Shape & Cool
  1. For perfectly round cookies, use a round bowl, cup, or cookie cutter to gently swirl around the cookies immediately after removing them from the oven.
  2. Let the cookies rest on the baking sheet for about 10 minutes before transferring.
Step 7 — Store & Enjoy
  1. Enjoy fresh, or store cookies in an airtight container in the refrigerator for up to 8 days.
