Chocolate Butterscotch Cookie Dough Balls

Ingredients
 
 

Dough
  • 1/2 cup peanut butter
  • 1/2 cup protein powder
  • 1 1/4 cup old-fashioned oats
  • 2 tsp cinnamon
  • 5 tbsp honey
  • 2 tsp vanilla
  • 1/3 cup milk
  • pinch of salt
  • 2 tbsp semi-sweet chocolate chips
  • 2 tbsp buttersctoch chips
  • 2 tbsp white chocolate chips
Coating
  • 1 cup semi-sweet chocolate

Method
 

Step 1: Mix the base
  1. In a medium bowl, mix together the peanut butter, honey, and vanilla extract until smooth and fully combined.
Step 2: Build the dough
  1. Blend the old-fashioned oats in a blender or food processor until they turn into a fine oat flour.
  2. Add the blended oats, protein powder, cinnamon, and a pinch of salt to the peanut butter mixture. Stir until a thick, slightly dry dough forms.
Step 3: Adjust texture & add chips
  1. Slowly mix in the milk, a little at a time, until the dough becomes soft and pliable.
  2. Fold in the semi-sweet chocolate chips, white chocolate chips, and butterscotch chips.
Step 4: Scoop
  1. Using a 2-tablespoon cookie scoop, portion the dough and roll each scoop between your hands to smooth into balls.
Step 5: Freeze
  1. Place the cookie dough balls onto a tray and freeze for 30–45 minutes, until firm.
Step 6: Coat in chocolate
  1. Melt the chocolate for coating until smooth.
  2. Dip each frozen dough ball into the melted chocolate, letting any excess drip off, then place back into the fridge to set for about 15 minutes.
Step 7: Serve & store
  1. Enjoy fresh, or store in a chilled environment for up to 14 days.
