Step 1 – Preheat & Prep
- Preheat oven to 375°F (convection). Beat room-temperature butter in a stand mixer or by hand for 3–5 minutes, until slightly off-white.
Step 2 – Add Sugars
- Add brown sugar and white sugar to the butter. Beat together for about 2 minutes until fluffy.
Step 3 – Mix in Wet Ingredients
- Add the large egg and mix until incorporated. Stir in vanilla extract and molasses (optional).
Step 4 – Add Dry Ingredients
- Add flour, baking soda, baking powder, and salt. Fold until a cookie dough forms.
Step 5 – Mix in Chocolate & Toffee
- Gently fold in chocolate chunks and toffee pieces until evenly distributed throughout the dough.
Step 6 – Prep Skillet & Bake
- Butter your cast iron skillet or preferred oven-safe pan. Spread cookie dough evenly into an 8-inch skillet. Sprinkle extra chocolate chips on top. Bake at 375°F for 18–20 minutes.
Step 7 – Add Toppings
- Serve fresh with your favorite toppings—ice cream, chocolate syrup, or caramel syrup all work beautifully!
Step 8 – Storage
- Enjoy fresh for best results. Store in an airtight container at room temperature for up to 6 days, or in the fridge for up to 10 days.
