Christmas Cookie Bars

Ingredients
 
 

Cookie Dough
  • 1 cup butter
  • 1 1/2 cup white granulated sugar
  • 1 large egg
  • 2 tsp of vanilla extract
  • 2 cups of All-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup pretzels crushed
  • 1 cup M&M’s red and green
  • 1/4 cup Christmas sprinkles
Topping
  • handful of pretzels
  • handful of M&M’s red and green
  • 1 tbsp Christmas sprinkles

Method
 

Step 1: Prep & Cream Butter
  1. Preheat oven to 350°F convection.
  2. In a bowl (or stand mixer with paddle attachment), beat room-temperature butter with granulated sugar for 1–2 minutes, until the mixture turns an off-white color.
Step 2: Add Wet Ingredients
  1. Mix in the egg and vanilla extract until fully combined.
Step 3: Add Dry Ingredients & Mix-ins
  1. Fold in all-purpose flour, baking soda, and baking powder.
  2. Next, gently fold in crushed pretzels, sprinkles, and M&M’s until evenly distributed.
Step 4: Spread in Pan
  1. Press the cookie dough evenly into an 8×8” square pan.
Step 5: Bake
  1. Bake for 18–20 minutes, then let the bars cool completely before cutting into 3×3 squares (for 9 bars, like pictured).
Step 6: Enjoy & Store
  1. Eat fresh, or store in an airtight container at room temperature for up to 8 days.
