Ingredients
 
 

Cookie Dough
  • 1 cup butter
  • 1 cup granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 3/4 cups All-Purpose Flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
Brown Sugar Swirl Mixture
  • 1/2 cup brown sugar
  • 2 tsp cinnamon
  • 2 tbsp butter
Cream Cheese Filling
  • 1 block cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
Coating
  • 1/2 cup granulated sugar

Method
 

Step 1 — Prepare the Cream Cheese Filling
  1. Preheat the oven to 350°F (convection). Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, mix together the room-temperature cream cheese, powdered sugar, and vanilla until smooth. Scoop 1-tablespoon portions onto a parchment-lined plate or tray and freeze until firm.
Step 2 — Make the Cookie Dough
  1. In a large bowl or stand mixer fitted with the whisk or paddle attachment, beat the room-temperature butter and granulated sugar until light and off-white in color, about 1–2 minutes.
  2. Add the egg and vanilla extract, mixing until fully combined.
Step 3 — Add Dry Ingredients
  1. Add the all-purpose flour, baking powder, and baking soda. Gently fold the dry ingredients into the dough until no dry spots remain.
Step 4 — Assemble the Cookies
  1. In a small bowl, mix together the brown sugar, cinnamon, and room-temperature butter to create the brown sugar swirl. Lightly chill the mixture so it’s easy to fold into the dough.
  2. Scoop ⅓ cup of cookie dough and gently fold in about 2 teaspoons of the brown sugar mixture. Flatten the dough in your palm, place a chilled cream cheese ball in the center, then fold the dough around the filling to seal. Roll each cookie dough ball in granulated sugar.
  3. Repeat with remaining dough.
Step 5 — Bake
  1. Place the filled cookie dough balls onto the prepared baking sheet, spacing evenly apart.
  2. Bake for 12–13 minutes, until the edges are set and the centers look slightly underbaked.
Step 6 — Shape & Cool
  1. For perfectly round cookies, use a round bowl, cup, or cookie cutter to gently swirl around the cookies immediately after removing them from the oven.
  2. Allow the cookies to rest on the baking sheet for about 10 minutes before transferring.
Step 7 — Store & Enjoy
  1. Enjoy fresh, or store cookies in an airtight container in the refrigerator for up to 8 days.
