Step 1: Soften the dates.
Place pitted dates in a bowl and pour warm water over them. Let sit for 2–5 minutes to soften.
Step 2: Blend.
Add the dates with the soaking water to a blender. Add maple syrup, vanilla, cinnamon, and salt. Blend until completely smooth, scraping down the sides as needed.
If the mixture is too thick, add a splash of warm water until it reaches a thick, pourable consistency.
Step 3: Strain (optional).
For extra smooth syrup, strain through a fine mesh sieve to remove any small bits.
Store in the fridge for up to one week.
