Step 1: Cream the base
- In a stand mixer fitted with a whisk or paddle attachment, beat the room-temperature vegan butter, brown sugar, and granulated sugar for 1–2 minutes, until light and off-white.
Step 2: Add flavor
- Mix in the vanilla extract until fully combined.
Step 3: Heat-treat the flour
- Spread the flour evenly on a microwave-safe plate or bowl and microwave for 90–120 seconds, stirring halfway through. Allow to cool slightly.
- Add the heat-treated flour to the dough and mix until smooth.
Step 4: Fold in chocolate chips
- Gently mix in the vegan chocolate chips just until evenly distributed.
Step 5: Serve & store
- Scoop into a serving bowl and enjoy immediately, or store covered in the refrigerator for up to 8 days.
