Healthy Cookie Dough Balls

Ingredients
 
 

Dough
  • 1/2 cup peanut butter
  • 2- scoops 1/2 cup protein powder
  • 1 1/4 cup old-fashioned oats
  • 5 tbsp honey
  • 2 tsp vanilla
  • 1/3 cup milk I used almond!
  • 1/4 cup chocolate chips/chunks
Coating
  • 1 1/2 cup chocolate

Method
 

Step 1: Mix the base
  1. In a medium bowl, mix together the peanut butter, honey, and vanilla extract until smooth.
Step 2: Add dry ingredients
  1. Blend the old-fashioned oats into a fine flour.
  2. Add the blended oats and protein powder to the peanut butter mixture and mix until a thick, dry dough forms.

Step 3: Adjust texture & add chocolate
  1. Slowly mix in milk, a little at a time, until the dough is soft and easy to work with.
  2. Gently fold in the chocolate chips.
Step 4: Scoop & roll
  1. Using a 2 tbsp cookie scooper, scoop the dough and roll into smooth balls with your hands.
Step 5: Chill
  1. Place the cookie dough balls in the freezer for 30–45 minutes to firm up.
Step 6: Chocolate coat
  1. Melt the chocolate until smooth.
  2. Individually dip each cookie dough ball into the chocolate and place back in the fridge to set for about 15 minutes.
Step 7: Store & enjoy
  1. Enjoy fresh, or store in a chilled environment for up to 14 days.
