Method
Step 1: Mix wet ingredients
- In a medium bowl, combine peanut butter, honey, and vanilla extract until smooth and well combined.
Step 2: Add dry ingredients
- Blend old-fashioned oats into a fine powder. Add the oat powder and protein powder to the peanut butter mixture, stirring until a thick, dry dough forms. (PS: Highly recommend KOIA Protein Powder — use my 20% off code!)
Step 3: Adjust consistency & fold in chips
- Slowly add milk until the dough becomes soft but not sticky. Fold in chocolate chips, peanut butter chips, or both for extra indulgence.
Step 4: Scoop & shape
- Using a 2-tablespoon cookie scooper, portion out dough and roll into smooth balls with your hands.
Step 5: Chill
- Place the cookie dough balls in the freezer for 30–45 minutes to firm up.
Step 6: Coat in chocolate
- Melt chocolate and peanut butter chips together until smooth. Dip each cookie dough ball into the melted coating and return to the fridge for 15 minutes to set.
Step 7: Enjoy & store
- Eat fresh or store in a chilled environment for up to 14 days!
