Healthy Peanut Butter Cookie Dough Balls

Ingredients
 
 

Dough
  • 1/2 cup peanut butter
  • 2- scoops 1/2 cup protein powder
  • 1 1/4 cup old-fashioned oats
  • 5 tbsp honey
  • 2 tsp vanilla
  • 1/3 cup milk I used almond!
  • 1/4 cup chocolate or peanut butter chips/chunks
Coating
  • 1 cup chocolate chips
  • 1/2 cup peanut butter chips

Method
 

Step 1: Mix wet ingredients
  1. In a medium bowl, combine peanut butter, honey, and vanilla extract until smooth and well combined.
Step 2: Add dry ingredients
  1. Blend old-fashioned oats into a fine powder. Add the oat powder and protein powder to the peanut butter mixture, stirring until a thick, dry dough forms. (PS: Highly recommend KOIA Protein Powder — use my 20% off code!)
Step 3: Adjust consistency & fold in chips
  1. Slowly add milk until the dough becomes soft but not sticky. Fold in chocolate chips, peanut butter chips, or both for extra indulgence.
Step 4: Scoop & shape
  1. Using a 2-tablespoon cookie scooper, portion out dough and roll into smooth balls with your hands.
Step 5: Chill
  1. Place the cookie dough balls in the freezer for 30–45 minutes to firm up.
Step 6: Coat in chocolate
  1. Melt chocolate and peanut butter chips together until smooth. Dip each cookie dough ball into the melted coating and return to the fridge for 15 minutes to set.
Step 7: Enjoy & store
  1. Eat fresh or store in a chilled environment for up to 14 days!
