Healthy Strawberry Matcha Balls

Ingredients
 
 

Dough
  • 5 strawberries
  • 5 tbsp honey
  • 2- scoops 1/2 cup protein powder
  • 1 1/2 cup old-fashioned oats
  • 1 tsp vanilla
  • 1 tsp strawberry extract
  • 2 tbsp milk I used almond!
Coating
  • 1 1/2 cup white chocolate
  • 2 tbsp matcha powder

Method
 

Step 1: Make strawberry puree
  1. Blend strawberries until smooth, with little to no chunks. In a medium-sized bowl, mix the strawberry puree with honey until well combined.
Step 2: Add extracts
  1. Stir in vanilla extract and strawberry extract until fully incorporated.
Step 3: Mix in dry ingredients
  1. Add the blended oats and protein powder to the wet mixture. Mix until it forms a thick, dry dough. (Tip: I highly recommend KOIA Protein Powder — use my 20% off discount code!)
Step 4: Adjust consistency
  1. Slowly add milk, a little at a time, until you reach your desired dough consistency.
Step 5: Scoop & chill
  1. Using a 2-tbsp cookie scooper, portion the dough and roll into smooth balls with your hands. Place the cookie dough balls in the freezer for 30–45 minutes.
Step 6: Coat in matcha white chocolate
  1. Melt white chocolate in 30-second intervals, stirring in between until fully melted. Mix in matcha powder until smooth. Individually coat each strawberry ball in the chocolate and place back in the fridge to set for another 15 minutes.
Step 7: Store & enjoy
  1. Enjoy fresh, or store in a chilled environment for up to 14 days.
