Step 1: Prep the Nutella Centers
- Preheat oven to 350°F convection. Scoop 1 tablespoon (20 g) portions of Nutella onto a parchment-lined tray and place in the freezer to firm up.
Step 2: Make the Cookie Dough
- Mix room-temperature butter with granulated sugar and brown sugar for 1–2 minutes, until combined.
- Add the egg and gently stir—avoid overmixing to keep the cookies soft and chewy.
- Mix in the vanilla extract and molasses until just combined.
Step 3: Add Dry Ingredients
- Fold in the flour and baking powder until fully incorporated, then gently fold in the chocolate chips.
Step 4: Fill & Shape
- Scoop ⅓ cup portions of cookie dough and flatten slightly in your palm. Place one chilled Nutella ball in the center and fold the dough around it until fully sealed. Repeat with remaining dough.
Step 5: Bake & Finish
- Bake cookies for 12 minutes.
- For perfectly round cookies, use a round bowl, cup, or cookie cutter to gently swirl around the edges while the cookies are hot. Let cookies rest on the tray for 10 minutes before removing.
