Single-Serve Healthy Brownie Ball

Ingredients
 
 

Dough
  • 1 tbsp peanut butter
  • 1 tbsp honey
  • 2 tbsp protein powder
  • 1/4 cup old-fashioned oats
  • 1 tbsp cocoa powder
  • 1/4 tsp vanilla
  • 1 tbsp milk I used almond!
  • pinch of salt
Coating
  • 2 tbsp semi-sweet chocolate

Method
 

Step 1: Mix the base
  1. In a medium bowl, stir together the peanut butter and honey until smooth and fully combined.
Step 2: Add dry ingredients
  1. Blend the old-fashioned oats into a fine powder.
  2. Add the blended oats, protein powder, cocoa powder, and salt to the peanut butter mixture. Mix until a thick, dry dough forms.

Step 3: Adjust consistency
  1. Slowly mix in the vanilla extract and milk until the dough becomes soft and scoopable.
Step 4: Scoop
  1. Using a 3-tablespoon cookie scoop, scoop one large ball of dough and gently roll it smooth.
Step 5: Chill
  1. Place the cookie dough ball in the freezer for 30–45 minutes, until firm.
Step 6: Coat in chocolate
  1. Melt the chocolate until smooth. Dip the chilled cookie dough ball into the chocolate, drizzling extra on top if desired.
  2. Return to the fridge for another 15 minutes to set.
Step 7: Enjoy or store
  1. Eat fresh, or store in a chilled environment for up to 14 days.
