Ingredients

Cookie Dough
  • 1 cup butter
  • 1/3 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp corn syrup optional
  • 2 1/4 cups All-Purpose Flour
  • 3/4 cup black cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
Cream Cheese Filling
  • 1 block cream cheese
  • 2/3 cup powdered sugar
  • 1/2 tsp vanilla extract
Topping
  • 1/4 cup granulated sugar

Method

Step 1
  1. Preheat the oven to 350ยฐF (convection). Line an 8ร—8-inch square pan with parchment paper and set aside.
  2. In a medium bowl, mix together the room-temperature cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
Step 2
  1. In a large bowl or stand mixer fitted with the whisk or paddle attachment, beat the room-temperature butter, granulated sugar, and brown sugar until light and off-white in color, about 1โ€“2 minutes.
  2. Add the egg, vanilla extract, and corn syrup, mixing until fully combined.
Step 3
  1. Add the all-purpose flour, black cocoa powder, baking powder, and baking soda. Gently fold the dry ingredients into the dough until no dry spots remain.
Step 4
  1. Press about โ…” of the cookie dough evenly into the prepared pan.
  2. Spread the cream cheese mixture over the dough in an even layer. Drop the remaining cookie dough over the top in chunks (it does not need to fully cover the surface).
  3. Sprinkle with extra granulated sugar, if desired.
