Lemon Blueberry Balls
Ingredients
- 1/2 cup blueberries
- 2- scoops 1/2 cup protein powder
- 1 1/2 cup old-fashioned oats
- 5 tbsp honey
- 1 lemon zest
- juice from 1 lemon
- 1/4 cup milk I used almond!
- 1 tsp lemon juice
- 1 tsp vanilla
- 1 1/2 cup white chocolate
- 1 tsp lemon extract
Method
- Add fresh blueberries and lemon juice to a blender. Blend until completely smooth.
- In a bowl, combine the blueberry puree, honey, vanilla extract, lemon extract, and lemon zest.
- Add blended oats (oat flour) and protein powder, mixing until a thick, dry dough forms.

- Slowly mix in milk until the dough becomes soft and easy to work with.
- Using a 2 tbsp cookie scooper, scoop the dough and roll into smooth balls with your hands.
- Place the lemon blueberry balls in the freezer for 30โ45 minutes to firm up.
- Melt white chocolate until smooth. If desired, mix in a little lemon extract.
- Dip each ball into the chocolate and place back in the fridge to set for about 15 minutes.
- Enjoy fresh or store in a chilled environment for up to 14 days.
