Make Now or Prep Ahead

If you’re ready to frost right away, whip up the buttercream as directed and use it immediately for the smoothest, fluffiest texture. Freshly beaten buttercream spreads beautifully and pipes so smoothly onto any dessert.

If you’d prefer to prep this ahead, you can make the frosting in advance and store it in an airtight container in the refrigerator for up to a week. When you’re ready to use it, let it come to room temperature and re-whip it for 1-2 minutes until it is light and fluffy again. Both methods work perfectly, so you can plan around your baking schedule with no stress!

Why I Measure in Grams (and You Might Want To, Too)

If youโ€™ve ever made the same recipe twice and gotten two totally different results, the measuring method is often the reason.

Professional bakeries almost always measure by weight, not volume. Measuring cups leave room for inconsistencyโ€”especially with ingredients that pack differently depending on how you scoop or pour them. A scale removes all of that guesswork.

Best Buttercream Frosting

Ingredients

Buttercream
  • 1 cup butter room temperature
  • 3 cups powdered sugar
  • 3 tbsp heavy cream
  • 2 tsp vanilla extract

Method

Step 1: Cream the Butter
  1. In a stand mixer, beat the butter on medium speed for 2โ€“3 minutes, until smooth and slightly lighter in color.
Step 2: Add the Powdered Sugar
  1. Gradually add in the powdered sugar and mix until a smooth paste forms. Scrape down the sides of the bowl as needed to ensure everything is fully incorporated.
Step 3: Add the Heavy Cream
  1. Pour in the heavy cream and mix on low speed until combined.
  2. Then increase the speed to high and beat for about 60 seconds. This step helps incorporate air into the frosting, making it light and fluffy.
Step 4: Add Vanilla
  1. Mix in the vanilla extract until fully incorporated and smooth.
  2. Use immediately, or transfer to a sealed bag/container and store in the refrigerator until ready to use. Let it come slightly to room temperature and re-whip if needed before frosting.
