Use room temp/slightly chilled) 3) scoop & chill cookie dough for 30-60 minutes before baking it! 4) donโ€™t over mix dry ingredients! (this is more directed at those using a stand/handmixer!)

Ingredients

Cookie
  • 1 cup butter
  • 1 & ยผ cup sugar
  • 1 egg
  • 1 tsp cotton candy extract
  • 1 tsp vanilla
  • Pink & blue food coloring
  • 2 ยฝ cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
Coating
  • Roll in ยฝ cup granulated sugar
Frosting
  • 1 cup butter
  • 3 cups powdered sugar
  • 2 tsp cotton candy extract
  • 2 tbsp heavy cream

Method

Step 1: Preheat
  1. Preheat the oven to 350ยฐF (convection) and line a baking sheet with parchment paper.
Step 2: Cream the base
  1. In a stand mixer fitted with a whisk or paddle attachment, beat the room-temperature butter and granulated sugar for 1โ€“2 minutes, until light and slightly off-white.
  2. Mix in the egg, vanilla extract, and cotton candy extract until fully combined. Add a few drops of pink and blue food coloring, if desired, and mix until evenly swirled.
Step 3: Add dry ingredients
  1. Add the all-purpose flour, baking powder, and baking soda. Mix on low speed or fold gently just until the dough comes together.
  2. Roll portions of the dough in granulated sugar to coat for extra sweetness and texture.
Step 4: Scoop & bake
  1. Scoop โ…“-cup portions of cookie dough and place onto the prepared baking sheet, spacing evenly.

  2. Add the cotton candy extract and heavy cream, then whip until light and fluffy.
