Oreo Cheesecake Bars (No-Bake)
Measurements:

2 cups cream cheese
2 cups powdered sugar
2 tsp vanilla extract
1 & 1/2 cup heavy cream
1/2 cup crushed oreos (6 oreos)
Crust & Topping
3 cups crushed oreos (30 oreos)
1/2 cup melted butter
Why measure in grams?
If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.
A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.

Measurements In Grams:
450 grams cream cheese
230 grams powdered sugar
8 grams vanilla extract
360 grams heavy cream
50 grams crushed oreos (6 oreos)
Crust & Topping
240 grams crushed oreos (30 oreos)
110 grams melted butter

Stand mixer with whisk attachment

Instructions:
Step 1
Let cream cheese sit until room temperature.
Mix cream cheese and powdered sugar in a bowl with a whisk, until mixture is smooth.
Step 2
Mix vanilla into cream cheese mixture.
Step 3
Whip heavy cream in a stand mixer with a whisk attachment (or using a hand mixer) until fluffy and whipped cream like texture.
Step 4
Fold whipped cream into cream cheese mixture.
Crush a few oreos and stir into cream cheese mixture.
Step 5
Crush more oreos for your crust & topping. Mix in melted butter until oreo chunks bind together more.
Add about 2/3rds of your oreo crust in the bottom of a parchment paper lined square pan. Smoosh down to keep crust from falling apart.
Step 6
Add cream cheese filling into pan and distribute evenly across pan. Add remaining oreo crust on top.
Step 7
Chill bars in the freezer for 5-6 hours (or overnight). Cut 4x4 using a large knife.
Eat fresh or keep chilled for up to 2 weeks!
