Single Blueberry Muffin
Measurements:

1 tbsp butter
2 tbsp granulated sugar
2 tsp egg white
1/4 tsp vanilla extract
2 tbsp All-Purpose Flour
1/4 tsp baking powder
2 tsp milk
3 tbsp blueberries (14-16 blueberries)
Why measure in grams?
If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.
A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.

Measurements In Grams:
15 grams butter
25 grams granulated sugar
12 grams egg white
1 gram vanilla extract
16 grams All-Purpose Flour
1 gram baking powder
12 grams milk
20 grams blueberries (14-16 blueberries)
Kitchen Equipment
Stand mixer with paddle attachment OR medium sized bowl with whisk and rubber spatula
cupcake pan
parchment paper
Instructions:
Step 1
Preheat oven to convection 375 degrees Fahrenheit.
Combine butter and sugar.
Step 2
Mix in vanilla extract and egg white until mixture is fairly smooth.
Add flour and baking powder. Fold dry ingredients into your batter until it is fully incorporated.
Step 3
Stir in milk until batter is smooth.
Step 4
Put blueberries and an extra tsp of flour into a bowl and mix together. (Coating blueberries in flour allows them to not sink while cooking.)
Step 5
Add muffin batter into a cupcake liner in your pan. Sprinkle 1 tbsp of sugar on top and bake at 375 degrees Fahrenheit for 24-25 minutes.
Let sit for 10 minutes before removing from pan and you are done!
