Graham Cracker Ball

  • 3 cups crushed graham crackers (2 sleeves)

  • 4 oz cream cheese (1/2 block)

  • 3/4 cup marshmallow fluff

Chocolate Coating

  • 1 & 1/2 cup chocolate chips

  • 1 tbsp vegetable oil


Why measure in grams?

If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.

A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.

Measurements In Grams:

Graham Cracker Ball

  • 280 grams crushed graham crackers (2 sleeves)

  • 4 oz cream cheese (1/2 block)

  • 96 grams marshmallow fluff

Chocolate Coating

  • 255 grams chocolate chips

  • 14 grams vegetable oil

Kitchen Equipment

  • Stand mixer with paddle attachment OR medium sized bowl with whisk and rubber spatula

  • parchment paper

  • large cookie scooper


 

Instructions:

  • Step 1

  • Crush graham crackers using a food processor and pour into bowl.

  • Step 2

  • Mix graham crackers with room temperature cream cheese and marshmallow fluff until evenly incorporated.

  • Step 3

  • Using a large cookie scooper (3 tbsp), scoop s’more balls. Roll balls in your palms until smooth. Chill in the fridge for 20-30 minutes.

  • Step 4

  • While s’more balls are chilling, melt the chocolate until smooth and then mix in vegetable oil. The vegetable oil allows you to get a thinner chocolate coating.

  • Step 5

  • Dip s’more balls into chocolate until coated evenly and then chill until chocolate coating has dried.

  • Step 6

  • Eat fresh or store in an air-tight container for up to 10 days!
