Peanut Butter Banana Overnight Oats (Mush Copycat)

Me and Livia first became obsessed with MUSH overnight oats after grabbing them as quick meals during our freshman year of college, and every time a new flavor hit the shelves, we would immediately run to the store to try it. When the peanut butter banana flavor came out, I wasn’t convinced since I’ve never been the biggest banana flavor fan, but Livia absolutely loved it. I have to admit though, peanut butter always has a way of elevating just about anything, so I ended up really enjoying it too. It honestly reminded us of when we were little and would get those classic Quaker oatmeal variety packs with blueberry, strawberry, banana, and peach. I would always race to claim the blueberry and strawberry flavors, while Livia happily grabbed the banana, leaving the peach packets to sit untouched in the box. She was always adamant that the banana one was the best, and the fac that she still says the same thing all these years later proves that banana never gets old, especially when it’s paired with nutty peanut butter. That’s exactly why we had to recreate this flavor at home, making a version that tastes just like MUSH’s peanut butter banana overnight oats while yielding so much more for a fraction of the cost.

Flavor It Your Way

Not a banana fan? (I’ll admit, I’m not the biggest myself.) No worries, you can easily swap the banana for unsweetened applesauce and have a delicious little apple and peanut butter moment instead. You can also switch up the nut butter, try almond butter, cashew butter, or even sunflower butter for a fun twist. Or keep the base as it is and have fun with the toppings. Some of our favorites, like the ones pictured, are a dollop of yogurt, thinly sliced almonds, crunchy granola, and cacao nibs, but the possibilities are endless. You could even lead into the flavor with chocolate chips for a chocolate peanut butter banana combo or fresh fruit for an extra refreshing bite. The best part is making it you own!

Why I Measure in Grams (and You Might Want To, Too)

If youโ€™ve ever made the same recipe twice and gotten two totally different results, the measuring method is often the reason.

Professional bakeries almost always measure by weight, not volume. Measuring cups leave room for inconsistencyโ€”especially with ingredients that pack differently depending on how you scoop or pour them. A scale removes all of that guesswork.

One of the biggest offenders is sugar. Different sugars (and even the same sugar measured by different people) can vary wildly in volume, but 100 grams is always 100 grams. Measuring by weight gives you repeatable, bakery-consistent results and cuts down on extra dishes at the same time.

Ingredients

  • 2 medjool dates
  • 1 tbsp peanut butter
  • 1 banana
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup water/milk
  • 1 cup old fashioned oats

Method

Step 1 โ€“ Blend the Base
  1. Add the water or milk, Medjool dates, peanut butter, banana, cinnamon, vanilla extract, and a pinch of salt to a high-speed blender or food processor. Blend until completely smooth and creamy with no date pieces remaining.
Step 2 โ€“ Add the Oats
  1. Place the old fashioned oats into 3โ€“4 airtight containers for meal prep, or add them all into one large container.
Step 3 โ€“ Combine
  1. Pour the blended mixture evenly over the oats and stir well until fully combined and coated.
Step 4 โ€“ Chill
  1. Cover and refrigerate for at least 2 hours, preferably overnight, until the oats are soft and thickened.
  2. Stir before serving and enjoy cold. Store covered in the refrigerator for up to 5โ€“7 days for best freshness.
