Peanut Butter Banana Overnight Oats (Mush Copycat)

Ingredients
 
 

  • 2 medjool dates
  • 1 tbsp peanut butter
  • 1 banana
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup water/milk
  • 1 cup old fashioned oats

Method
 

Step 1 – Blend the Base
  1. Add the water or milk, Medjool dates, peanut butter, banana, cinnamon, vanilla extract, and a pinch of salt to a high-speed blender or food processor. Blend until completely smooth and creamy with no date pieces remaining.
Step 2 – Add the Oats
  1. Place the old fashioned oats into 3–4 airtight containers for meal prep, or add them all into one large container.
Step 3 – Combine
  1. Pour the blended mixture evenly over the oats and stir well until fully combined and coated.
Step 4 – Chill
  1. Cover and refrigerate for at least 2 hours, preferably overnight, until the oats are soft and thickened.
  2. Stir before serving and enjoy cold. Store covered in the refrigerator for up to 5–7 days for best freshness.
