Snickerdoodle Ice-cream Sandwiches

Ingredients

Cookie Dough
  • 1 cup butter
  • 1 1/3 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 egg
  • 2 2/3 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
Cinnamon Sugar
  • 1/2 cup granulated sugar
  • 1 tbsp cinnamon
Cinnamon Ice Cream
  • 1 cup whole milk
  • 2 cups heavy cream
  • 2/3 cup powdered sugar
  • 1 tbsp vanilla extract
  • pinch of salt
  • 1 tbsp cinnamon

Method

Step 1 โ€“ Preheat the Oven
  1. Preheat your oven to convection 350ยฐF and line a baking tray with parchment paper.
Step 2 โ€“ Cream Butter & Sugar
  1. In a stand mixer (or by hand), beat the room-temperature butter and granulated sugar until the mixture turns light and off-white, about 1โ€“2 minutes.
Step 3 โ€“ Add Egg & Vanilla
  1. Mix in the egg and vanilla extract until fully combined.
Step 4 โ€“ Add Dry Ingredients
  1. Fold in the all-purpose flour, baking powder, and baking soda until a soft cookie dough forms.
Step 5 โ€“ Scoop, Roll & Bake Cookies
  1. Scoop โ…“ cup portions of dough, roll each in cinnamon sugar, and place on the prepared tray.
  2. Bake for 13โ€“14 minutes.
  3. For perfectly round cookies, swirl a cup or cookie cutter around each cookie right out of the oven. Let cookies cool completely.
Step 6 โ€“ Make the Cinnamon Ice Cream
  1. In a large bowl, combine whole milk, heavy cream, powdered sugar, cinnamon, and a pinch of salt.
  2. Whip with a hand mixer or stand mixer fitted with the whisk attachment until fluffy with soft peaks.
  3. Gently fold in vanilla extract.
Step 7 โ€“ Freeze the Ice Cream
  1. Transfer the mixture to a freezer-safe container and freeze for 2โ€“3 hours or overnight until firm.
Step 8 โ€“ Assemble the Ice Cream Sandwiches
