Pesto Egg & Ham Breakfast Tacos

  • serving size: 2 tacos

Measurements:

  • 2 corn tortillas

  • 2 eggs

  • 4 slices deli ham

  • 2 tbsp pesto

Measurements in Grams:

  • 45-50 grams corn tortillas

  • 2 eggs

  • 56 grams deli ham

  • 32 grams pesto


Instructions

Step 1

  • Spread pesto onto your tortillas.

  • Heat a pan on the stove top at medium-low heat. Butter/oil the pan and place tortillas onto pan.

Step 2

  • While tortillas are getting crispy, heat another pan on medium-low heat, to cook your eggs.

  • Butter/oil this pan and cook your eggs in a scramble.

  • Remember to watch your tortillas until they are crispy to your liking.

Step 3

  • Slice deli ham into small chunks and throw it into pan with your scrambled eggs. Stir ham chunks into scrambled eggs.

Step 4

  • Scoop ham and eggs into the crispy pesto tortillas and enjoy!
