Pesto Breakfast Tacos
Measurements:
2 corn tortillas
2 eggs
4 slices deli ham
2 tbsp pesto
Measurements in Grams:
45-50 grams corn tortillas
2 eggs
56 grams deli ham
32 grams pesto
Instructions
Step 1
Spread pesto onto your tortillas.
Heat a pan on the stove top at medium-low heat. Butter/oil the pan and place tortillas onto pan.
Step 2
While tortillas are getting crispy, heat another pan on medium-low heat, to cook your eggs.
Butter/oil this pan and cook your eggs in a scramble.
Remember to watch your tortillas until they are crispy to your liking.
Step 3
Slice deli ham into small chunks and throw it into pan with your scrambled eggs. Stir ham chunks into scrambled eggs.
Step 4
Scoop ham and eggs into the crispy pesto tortillas and enjoy!
