Ingredients To Prepare

Crispy Herb Roasted Sweet Potatoes
Ingredients
- 4 large sweet potatoes
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 2 tsp salt
- 2 tsp black pepper
- 2 tsp oregano
- 1 tsp parsley
- 1 tsp cumin
- 1 tsp thyme
- 1 tsp paprika
- Olive oil or butter spray
Method
- Preheat your oven to 425ยฐF. Line a large baking sheet with parchment paper.
- Peel the sweet potatoes (optional) and cut them into evenly sized 1-inch cubes so they cook evenly.
- Bring a large pot of water to a boil. Add the cubed sweet potatoes and boil for 8โ10 minutes, until slightly fork-tender but not fully soft (helps make them extra soft!)
- Strain the potatoes and let them sit for a few minutes to steam dry. This helps them crisp up in the oven.
- Spread the potatoes in a single layer on the prepared baking sheet. Drizzle with olive oil or spray lightly with butter spray.
- In a small bowl, mix together the garlic powder, onion powder, salt, black pepper, oregano, parsley, cumin, thyme, and paprika.
- Sprinkle the seasoning mixture evenly over the potatoes and gently toss or use a spatula to coat each cube thoroughly.
- Bake for 35โ40 minutes. Around the 20-minute mark, use a spatula to flip and move the potatoes to ensure even browning.
- Remove from the oven once golden and lightly crispy on the edges. Serve fresh and enjoy!
- Storage: Store in an airtight container in the refrigerator for up to 1 week. Reheat in the oven or air fryer for best texture.
