Secret Tip for Easy Swaps and Flavor Twists

Here’s a secret tip for making these lemon blueberry balls even more versatile. This recipe uses blended blueberries for a naturally sweet, chewy texture, and that lovely blueberry flavor, but if the blueberries feel a little too tricky to prep or you’re short on time, you can easily swap them for any dates or applesauce, or even any seed butter. Lemon Blueberry Balls

Ingredients

Dough
  • 1/2 cup blueberries
  • 2- scoops 1/2 cup protein powder
  • 1 1/2 cup old-fashioned oats
  • 5 tbsp honey
  • 1 lemon zest
  • juice from 1 lemon
  • 1/4 cup milk I used almond!
  • 1 tsp lemon juice
  • 1 tsp vanilla
Coating
  • 1 1/2 cup white chocolate
  • 1 tsp lemon extract

Method

Step 1 โ€“ Blend the Blueberries
  1. Add fresh blueberries and lemon juice to a blender. Blend until completely smooth.
Step 2 โ€“ Mix the Dough Base
  1. In a bowl, combine the blueberry puree, honey, vanilla extract, lemon extract, and lemon zest.
  2. Add blended oats (oat flour) and protein powder, mixing until a thick, dry dough forms.

Step 3 โ€“ Adjust the Texture
  1. Slowly mix in milk until the dough becomes soft and easy to work with.
Step 4 โ€“ Scoop & Roll
  1. Using a 2 tbsp cookie scooper, scoop the dough and roll into smooth balls with your hands.
Step 5 โ€“ Chill
  1. Place the lemon blueberry balls in the freezer for 30โ€“45 minutes to firm up.
Step 6 โ€“ Coat in Chocolate
  1. Melt white chocolate until smooth. If desired, mix in a little lemon extract.
  2. Dip each ball into the chocolate and place back in the fridge to set for about 15 minutes.
Step 7 โ€“ Enjoy or Store
  1. Enjoy fresh or store in a chilled environment for up to 14 days.
